Veg Pulao

Perfect for: Family lunches, weekend meals, or quick wholesome dinners

Ingredients:

  • 1 cup Indian Harvest Everyday Extra Long Basmati Rice

  • 2 tbsp ghee or oil

  • 1 medium onion (sliced)

  • 1 cup mixed vegetables (peas, carrots, beans, potatoes)

  • 1 green chili (slit)

  • 1 tsp cumin seeds

  • 1 tsp garam masala

  • Salt to taste

  • 2 cups water

  • Fresh coriander or fried onions for garnish

Method:

  1. Wash and soak Everyday Basmati Rice for 30 minutes. Drain well.
  2. Heat ghee in a pan, add cumin seeds and let them splutter.
  3. Add sliced onions and sauté till golden brown.
  4. Add chopped vegetables and green chili; cook for 3–4 minutes.
  5. Mix in garam masala and salt.
  6. Add soaked rice and water, stir gently once.
  7. Cover and cook on a low flame for 12–15 minutes till rice is fluffy and grains are separate.
  8. Let it rest for 5 minutes before serving. Garnish with coriander or fried onions.

Serving: 3–4 people
Ready in: 30–35 minutes

Tip: Add a dash of lemon juice while cooking for a light, fresh flavor.
