Veg Pulao
Perfect for: Family lunches, weekend meals, or quick wholesome dinners
Ingredients:

1 cup Indian Harvest Everyday Extra Long Basmati Rice

2 tbsp ghee or oil
-
1 medium onion (sliced)
-
1 cup mixed vegetables (peas, carrots, beans, potatoes)

1 green chili (slit)
-
1 tsp cumin seeds
-
1 tsp garam masala
-
Salt to taste
-
2 cups water
-
Fresh coriander or fried onions for garnish
Method:
- Wash and soak Everyday Basmati Rice for 30 minutes. Drain well.
- Heat ghee in a pan, add cumin seeds and let them splutter.
- Add sliced onions and sauté till golden brown.
- Add chopped vegetables and green chili; cook for 3–4 minutes.
- Mix in garam masala and salt.
- Add soaked rice and water, stir gently once.
- Cover and cook on a low flame for 12–15 minutes till rice is fluffy and grains are separate.
- Let it rest for 5 minutes before serving. Garnish with coriander or fried onions.
Serving: 3–4 people
Ready in: 30–35 minutes

Tip: Add a dash of lemon juice while cooking for a light, fresh flavor.
