Masala Rice

Ingredients:

2 cups Indian Harvest PURE CLASSIC XXL Extra Long Basmati Rice

2 tbsp oil or ghee
-
1 tsp cumin seeds
-
1 large onion, finely sliced
-
2 tomatoes, chopped
-
1 green chili, slit
-
½ cup green peas
-
½ cup chopped carrots
-
½ cup chopped capsicum
-
1 tbsp ginger-garlic paste
-
½ tsp turmeric powder
-
1 tsp red chili powder
-
1 tsp garam masala
-
½ tsp cumin powder
-
½ tsp coriander powder
-
Salt to taste

Fresh coriander leaves for garnish

Lemon wedges (optional)
Method:
- Cook the Rice: Rinse and cook Indian Harvest PURE CLASSIC XXL Basmati Rice until soft and fluffy. Spread it out to cool slightly.
- Prepare the Masala: Heat oil or ghee in a pan. Add cumin seeds, then onions, and sauté until golden brown. Add ginger-garlic paste and cook for a minute.
- Add Veggies & Spices: Add tomatoes, peas, carrots, and capsicum. Stir well. Then add turmeric, chili powder, garam masala, cumin, coriander powder, and salt. Cook till tomatoes turn mushy and oil separates.
- Mix the Rice: Add the cooked rice and gently mix until it’s evenly coated with the masala. Let it cook for 2–3 minutes on low flame so the flavors blend in beautifully.
- Garnish & Serve: Turn off the heat, garnish with fresh coriander, and serve hot with curd or papad.

Tip:
