Lemon Rice
Perfect for: A tangy, refreshing South Indian-style lunch
Ingredients:

2 cups cooked Indian Harvest Everyday Basmati Rice (cooled)

2 tbsp oil

1 tsp mustard seeds
-
1 tbsp roasted peanuts

1–2 dry red chilies
-
A few curry leaves
-
¼ tsp turmeric powder
-
2 tbsp lemon juice
-
Salt to taste
Method:
- Cook the rice and let it cool completely to avoid breaking the grains.
- Heat oil in a pan, add mustard seeds, and let them splutter.
- Add red chilies, curry leaves, peanuts, and turmeric. Sauté till fragrant.
- Add the cooked Everyday Basmati Rice, salt, and lemon juice.
- Toss gently on low heat for 2–3 minutes to combine everything.
- Serve warm with papad or coconut chutney.
Serving: 2–3 people
