Chicken Biryani

Perfect for: Festive gatherings, family dinners, or celebrations

Ingredients:

  • 2 cups Indian Harvest Pure Classic XXL Extra Long Basmati Rice

  • 500g chicken (with bone preferred)

  • 2 large onions (sliced)

  • 1 large tomato (chopped)

  • ½ cup yogurt

  • 2 tbsp biryani masala

  • 1 tbsp ginger-garlic paste

  • Few saffron strands soaked in 2 tbsp warm milk

  • 2 tbsp ghee

  • Mint and coriander leaves for garnish

  • Salt to taste

Method:

  1. Wash and soak Pure Classic XXL Basmati Rice for 30 minutes.
  2. In a large pot, heat ghee and sauté onions till golden. Remove half for garnishing.
  3. Add ginger-garlic paste, chicken, and cook till lightly browned.
  4. Add tomatoes, yogurt, biryani masala, and salt. Cook till chicken is tender and masala thickens.
  5. In another pot, boil water with salt and cook rice till 80% done. Drain.
  6. Layer the rice and chicken masala alternately.
  7. Drizzle saffron milk and top with fried onions, mint, and coriander.
  8. Cover tightly and cook on low flame (dum) for 15–20 minutes.
  9. Let rest for 10 minutes before serving. Fluff gently before plating.

Ready in: 60–70 minutes

Tip: Use bone-in chicken for richer flavor and authentic aroma.
