Lemon Rice

Perfect for: A tangy, refreshing South Indian-style lunch

Ingredients:

  • 2 cups cooked Indian Harvest Everyday Basmati Rice (cooled)

  • 2 tbsp oil

  • 1 tsp mustard seeds

  • 1 tbsp roasted peanuts

  • 1–2 dry red chilies

  • A few curry leaves

  • ¼ tsp turmeric powder

  • 2 tbsp lemon juice

  • Salt to taste

Method:

  1. Cook the rice and let it cool completely to avoid breaking the grains.
  2. Heat oil in a pan, add mustard seeds, and let them splutter.
  3. Add red chilies, curry leaves, peanuts, and turmeric. Sauté till fragrant.
  4. Add the cooked Everyday Basmati Rice, salt, and lemon juice.
  5. Toss gently on low heat for 2–3 minutes to combine everything.
  6. Serve warm with papad or coconut chutney.

Serving: 2–3 people
